Persian Saffron-Infused Gin and Tonic
Ingredients
Makes 2
Pinch saffron threads (or to taste)
½ cup gin
¼ cup caster sugar
Ice cubes, to serve (see tip, below)
2 cups chilled tonic water
Lime wedges, to serve
Instructions
Place the saffron threads into gin. Set aside for 1 hour to infuse. Strain. Place sugar and 2 tablespoons water in a small saucepan. Stir over low heat for 2-3 minutes or until dissolved. Set aside to cool. Divide saffron-infused gin between two 1½-cup capacity glasses. Add 1-2 tablespoons of sugar syrup (to taste). Stir then top with ice cubes and tonic. Serve with lime wedges.
Smart tip
You can serve the drink with saffron ice cubes. Infuse ½ of the saffron in gin. Freeze remaining in ice cube trays. As the ice melts, it will flavour and colour the drink.
